Day 1: Saigon Arrival.
Welcome to Vietnam’s modern metropolis: Saigon (Ho Chi Minh City). Arrive in the late morning and enjoy an orientation tour through Saigon’s bustling streets en route to the hotel. Enjoy the afternoon at your leisure, then savor a welcome dinner at one of Saigon’s finest restaurants.
Meals: Dinner.
Accommodation: Hotel in Saigon.

Day 2: Saigon Cooking Class & Cu Chi Tunnels.
Enjoy a morning cooking lesson at the Vietnam Cookery Center. Your hands-on cooking course is conducted by a professional chef and translated by a MC, who will explain the teaching of the chef and talk about the history and culture of Vietnamese cuisine. The lesson includes a market visit and lunch. In the afternoon, you leave Saigon on an afternoon excursion to the Cu Chi Tunnels. The Cu Chi Tunnels are an underground labyrinth of passageways, used by the Viet Cong during the Vietnam War (or “American War” as it’s referred to here) as protection against American air raids. Those inclined are invited to crawl through selections of the tunnels to better understand what life was like for the Vietnamese soldiers during wartime.

Day 3: Saigon – Mekong Delta – Can Tho.
Today you leave the bustle of the big city and drive to the lush Mekong River Delta. Leave the hotel at 7:30 AM for a 3-hour drive to Cai Be, stopping en route for a tea break at the Trung Luong Bonsai Garden. Upon arrival, board a motorized boat to visit the popcorn cake and rice paper making factory, before visiting Cai Be’s lively floating market. Continue by boat towards Vinh Long province to see the diverse fish traps. After cruising along narrow, shady canals, you step ashore for a traditional music show. Enjoy lunch at a local home/ bonsai garden. After lunch, take a short walk through the peaceful countryside, pausing on the way to learn more about the tropical fruit trees. Continue by boat to visit a brick and pottery factory, before returning to the car for the drive to Can Tho. Arrive in Can Tho in the late afternoon and enjoy a leisurely walking tour through the evening market.

Day 4: Can Tho – Cai Rang Floating Market – Saigon.
Wake early and leave the hotel to visit the famous Cai Rang floating market by motor boat. Continue the boat ride to visit the Mekong Delta’s famous orchards and sample some of the fresh, exotic fruit. Then venture deeper into the country side, passing traditional houses made of wood and palm leaves as you observe the activities of the local people. Return to Can Tho for lunch then drive back to Saigon, arriving in the late afternoon.

Day 5: Saigon – Danang – Hoian.
Today you fly from Saigon to Danang. Your guide and driver will meet you at the airport and take you on the short drive to Hoian. Immerse yourself in the tranquility and charm of this sleepy riverside town. From the 16th to 18th centuries Hoian was a thriving international port frequented by Chinese, Dutch, French, Japanese, Portuguese and Arab traders, who came to trade in the high quality silk still produced in the region. Today, Hoian is a relaxing resort popular with tourists for its eclectic architecture, skilled tailors and numerous cafes. Take a half-day walking tour through the narrow winding streets of the ancient quarter, visiting Chua Ong Pagoda, the Chinese Assembly Hall, the 200-year old Tam Ky ancestral house and the famous Japanese Bridge.

Day 6: Hoian Cooking Class.
Today enjoy a cooking class at the Red Bridge Cooking School. Meet at the Hai Scout Cafe in Hoian’s Old Town. From there we will head to Hoian's colorful market. Explore the market and interact with local vendors to purchase some fresh ingredients for today’s cooking class. Next, board the Red Bridge boat for a leisurely 25min cruise along the Hoian River to the Red Bridge Cooking School. Discover the school's herb and vegetable garden before starting your cooking lesson. The class runs for about an hour and 15min and includes demonstrations from the school's chefs as well as time to help prepare traditional dishes. At the end of class, enjoy an introductory lesson in the art of Vietnamese food carving (plate decoration). Return to Hoian in the afternoon and enjoy the rest of the day free at your leisure to relax on the beach or explore the ancient town and its famous tailor shops.

Day 7: Hoian – Danang – Hanoi.
Today you travel from Hoian to Vietnam’s colorful colonial capital: Hanoi. In the morning drive to Danang to catch your flight to Hanoi. Your driver and guide will meet you outside the baggage claim of Noi Bai Airport and take you to your hotel in the city center. In the afternoon enjoy a cyclo tour through the Old Quarter’s narrow streets lined with French colonial buildings – followed by a gourmet dinner at one of Hanoi’s finest restaurants.

Day 8: Hanoi Cooking & Sightseeing Tour.
Start the day with a cooking class, beginning with a walk through the local market, with the chef of the Spices Garden Restaurant, to learn about Vietnamese ingredients. Then head to the kitchen to participate in the preparation of a traditional Vietnamese meal. After the class, have lunch at the Spices Garden Restaurant, sampling all the different dishes prepared during the class. In the afternoon enjoy a  guided city tour of Vietnam’s charming capital. With its wide tree-lined boulevards, French colonial architecture, peaceful lakes and ancient oriental pagodas; Hanoi is an eclectic mix that offers something for everyone. Your city tour takes you to Hanoi’s key sites: the Ho Chi Minh Complex (Ho Chi Minh's Mausoleum and stilt house), the nearby One Pillar Pagoda; and the Temple of Literature. Then enjoy a traditional Water Puppet Performance – a unique Vietnamese Art form hailing from Southeast Asia’s wet-rice culture.

Day 9: Hanoi Departure.
Today is free at your leisure for last minute shopping or sight-seeing before driving to the airport to catch your departure flight home.
